I've never made peanut brittle before this week. Hard to believe but it's true. I saw Linsday's recipe on Passionate Homemaking for healthy peanut brittle. Yum!!
Most other recipes call for corn syrup or plain white sugar. Lindsay's recipe uses healthier ingredients (though it's probably still really fattening).
I would say we're going to make a bunch and give it as gifts, but each batch has disappeared as quickly as it cooled. :)
